If you’re a huge enthusiast of spaghetti dishes then you should definitely try chicken carbonara as it is a classic for any spaghetti or pasta dish lover. Or if you’re in the mood for comfort food then nothing beats a good chicken carbonara. Plus it’s so simple to make as well.
- 500 grams of fettuccine or any pasta of your liking
- 3-4 cloves garlic, minced
- 250 grams of boneless chicken cut into cubes
- Salt and freshly grounded black pepper
- 70 grams of parmesan (more for garnish)
- 4 eggs
- 70 grams parsley (more for garnish)
In a large pot take water and generously salt the water, make pasta as directed on the packaging, or boil until soft. This should take about 10-15 minutes. After boiling, drain the pasta while reserving ½ cup of pasta water.
Take a large-sized skillet to add butter and parsley after that is heated add the chicken, and season the chicken generously with salt and freshly grounded black pepper (or add seasoning to your liking). Cook for 10 minutes and flip halfway through.
Reduce heat to low and add cooked pasta into the skillet with the chicken and toss them until it is well combined.
In a separate bowl, beat the eggs together, add parmesan, and parsley, and season with salt and black pepper.
Now, pour the egg mixture into the skillet and toss the m until the egg mixture is well coated onto the pasta, add a few tablespoons of pasta water until it thickens and becomes creamy.
Finally, garnish with parsley and parmesan (add as much as you want) and serve immediately as it is enjoyed more when hot.
